News of Portugal’s removal from the UK government’s red list has increased the hope of international travel this summer – and stirred memories of trips to this wildly varied country: from surfing its spectacular coast to leaping into the pristine rivers in its mountainous north and the fabulous restaurants in Lisbon and Porto.
